Can I switch vertical and horizontal axis?

No, the axes on the Crop Map are fixed. The horizontal axis always represents the beds within a block, and the vertical axis always represents the time of year (the calendar, from January to December). This layout is designed to provide a clear and consistent visualization of your planting schedule throughout the growing season. Read more about the Crop Map spatial view.
